Chicken Curry - Leftover Roast Chicken
Since it's winter time in London, Sundays are made of Roast dinners. My favourite. We like to mix up the meats a bit but chicken would have to be my favourite.... for two reasons; 1) chicken broth 2) leftover chicken for lunches. I love taking in my lunches to work during the week so I know exactly what I'm eating and I tend to bring in food that can be warmed up. Without trying to sound too much like a diva I'm not a huge fan of cold food.
I'll have a mug of broth each evening throughout the week. Inspired by the book "Hemsley and Hemsley" I learned the benefits of broth - nourishing and full of nutrients - protein especially if you are ill or prevention of illness!
So here's my recipe for a delicious, nutrient packed healthy chicken curry. I use whatever I have left in the fridge from the roast dinner, the more veg the better... but here's tonight's curry:
Coconut oil 1 onion, finely chopped 3 garlic cloves Freah ginge Chopped tomatoes Tin of tomatoes chicken stock leftover roast chicken Salt and pepper Mushrooms Green beans Red lentils Kale
Spices: 2 tsp ground coriander 1 tsp ground cumin 1 tsp garam masala half tsp ground cardamom half tsp ground cinnamon half tsp ground turmeric half tsp ground chilli powder (or to taste)
I'm not a huge fan of rice so I normally just have the curry on its own but serve with rice or naan.
Really healthy, packed with nutrients. Win win!
